Punjabi Pakora Kadhi

Punjabi pakora Kadhi or Kadhi Pakora is a delicious and popular recipe from the cuisine of Punjab. In this preparation the Pakoras are cooked in a tangy and spicy yogurt gravy. Hot steamed rice is the perfect accompaniment to the punjabi kadhi pakora.

Preparation time – 15 min
Cooking time – 30 min
Serves – 6 to 8

 Ingredients:

Cumin seeds/jeera – 1/2 tsp
Fenugreek seeds/Methi – 1/2 tsp
Ginger – 1 tbsp chopped finely
Asafoetida/Hing – 1/8 tsp
Dry red chilies – 5
Red chili powder – 1 tsp

Ingredients required for making Kadhi:

Gram flour/Besan – 1/2 cup (around 8 tbsp)
Sour yogurt – 2 cups
Turmeric powder – 1 tsp
Salt – as per your taste
Water – 3 cups

Ingredients required for making Pakoras:

Gram flour/Besan – 1 cup
Onion – 1 small chopped finely
Red chili powder – 1/2 tsp or as per your taste
Salt – as per your taste
Baking soda – a pinch
Oil – for frying

Method:

For making the Pakoras:

1. Heat oil in a deep pan for frying the pakoras. In a bowl add in 1 cup of gram flour/besan, onion, red chili powder, salt and a pinch of baking soda and mix. Add water little by little and mix well till you attain a semi-solid consistency.

Make small balls and deep fry the pakoras till it is nice and golden in color. Drain them on a paper towel to remove the excess oil and keep it aside.

For making the Kadhi Pakora:

1. In a large mixing bowl add in 2 cups of sour yogurt and a 1/2 cup of gram flour/besan and mix well. Add in 3 cups of water, turmeric powder and the required salt and mix well.

2.Heat up 2 tbsp of oil in a deep pan. When the oil in hot add in 1/2 tsp of cumin seeds, fenugreek/methi seeds, asafoetida/hing and the finely chopped ginger and saute well for 3o sec. Now add in the prepared yogurt and besan mixture to the seasoning and mix and allow it to boil well on a medium flame for 15 minutes. Keep stirring occasionally. Add in some water if the mixture thickens.

After 15 minutes of boiling add in the fried pakoras and let it boil again on a medium flame for 15 minutes.

3. In a small skillet add 4 tsp of oil and allow it to heat up. Now add in the whole dry red chilies and red chili powder and add it immediately to the kadi pakora.

 

The delicious Punjabi Pakora Kadhi is all ready to enjoy with hot steamed rice.
