Stuffed Peppers which is also known as Stuffed Capsicum is a popular dish in many countries. There are so many different kinds of fillings which can be used to make this mouth watering dish. In this recipe, the peppers/capsicum is stuffed with potatoes, paneer and few other spices but they can be stuffed with meat, veggies, cheese and much more. It’s mainly served as an appetizer but can be substituted as a meal.

Makes – 4, approx
Ingredients:
Peppers/Capsicum – 2, colors of your choice
Potatoes – 2, mashed
Paneer – 1/2 cup grated
Almonds/cashews – 1/4 cup, finely chopped
Green chilies – 2 finely chopped
Coriander leaves/cilantro – few strings, finely chopped
Salt – as required
Chili powder – as per your taste
Garam masala – 1/2 tsp or as per taste
Oil – required for pan frying
Method:
1. Combine mashed potatoes, grated paneer, chopped nuts, finely chopped green chilies, cilantro/coriander leaves, garam masala powder, chili powder and salt. Mix till everything is well combined.
2. Cuts the tops and bottom of the bell peppers/capsicum and discard seeds. Slice them into half an inch circles.
3. Now stuff them with the potato and paneer mixture. Press the mixture gently so that it stay inside the rings.
4. Place heavy bottomed pan on a medium heat and grease it with little oil. Once the oil gets hot, place the stuffed bell pepper rings. Flip it after a minute. Cover and let it get cooked well for 2 minutes.
5. Flip the bell peppers to the other side. Cook well on both the sides till they are nice and golden in color. Transfer it to a plate and serve them hot.
