Spring rolls are one of the popular and delicious snack/appetizer from Indo Chinese cuisine. These delicious spring rolls are nice and crunchy on the outside and with the vegetable filling inside. These are perfect for a tea time snack or with a bowl of noodles for lunch or dinner. It can be served with sweet chili sauce or with tomato ketchup. It tastes best when served hot. It is one of the kids favorites.

Ingredients:
Required to make the spring roll sheets:
All purpose flour/Maida – 1 cup
Corn flour – 1/4 cup
Salt – as required
Water – 1 cup
Required to make the filling:
Cabbage – 1/4 cup finely shredded
Carrots – 1/4 cup finely shredded
Green bell pepper/Capsicum – 1/4 cup finely shredded
Salt – as required
Black pepper powder – 1/2 tsp or as required
Soy sauce – 1 tbsp
Oil – 1 tbsp
Oil – required for frying
Method:
To prepare the sheets:
1. Combine a cup of all purpose flour/maida, corn flour, salt in a bowl. Add in 1 cup of water and mix well until it is well combined and there are no lumps. The batter should be of pouring consistency.
2. Heat nonstick pan on a medium heat. Once the pan is hot lift the pan from the heat and pour 2 tsp of batter and quickly spread it out thin. Now place the pan back on the heat and allow it to cook for a minute or two.
3. Cook it on a medium heat until the edges begin to peel off. Now flip it to the other side and let it cook for just 20 seconds. Repeat the same for the rest of the batter. Set aside all the prepared sheets. These sheets can also be frozen for later use.
To prepare the filling:
1. Heat oil in a pan. Once the oil is hot add in all the vegetables. Add in required salt, soy sauce and black pepper powder. Saute them on a high heat for 5 min and switch off the stove. The vegetables has to be crisp. Set aside and allow it to cool down.
To prepare the spring rolls:
1. In a bowl make a paste of all purpose flour/maida, corn flour with little water.
2.Take one prepared spring roll sheet and place a tsp of prepared filling in the center.
3. Apply the maida and corn flour paste around the edges and roll it and seal it tightly. Repeat the same for the rest of the sheets. Check out the video for the detailed process.
4. Heat oil for frying on a medium heat. Gently, drop each one in the hot oil and fry well on both the sides till they turn nice and golden in color.
5. Drain them on a paper towel to remove any excess oil.
Serve it hot with some sweet chili sauce or with tomato ketchup.
