Vegetable salna is a delicious recipe which is served as a side dish for Parottas in hotels of Tamil Nadu. It is spicy and it tastes awesome with hot and crispy Parottas. It is a perfect accompaniment for roti, poori, idli and dosa too.
Preparation time – 20 min
Cooking time – 30 min
Serves – 4 to 6
Ingredients:
Mixed vegetables (carrots, green beans, green peas, potatoes) – 1 cup
Onion – 1 small sized cut lengthwise
Tomatoes – 1 medium sized chopped
Turmeric powder – 1/4 tsp
Salt – as per your taste
Fennel seeds – 1/4 tsp
Bay leaf – 2
Cloves – 4
Cinnamon stick – 1 inch piece
Oil – 1 tbsp
Coriander leaves – few finely chopped for garnish
Ingredients required for dry roasting and grinding:
Coriander seeds – 3 tsp
Cumin seeds/jeera – 1 tsp
Red chilies – 3
Green chilies – 3
Coconut – 1/2 cup
Ginger – 1 inch piece
Garlic cloves – 5
Onion – 2 tbsp
Cashews – 2 tsp
Oil – 1 tsp
Method:
1. In a pan add a tsp of oil. Now add in the coriander seeds, cumin seeds and red chilies and roast till nice aroma comes. Transfer to a plate and allow it to cool down.
2.In the same pan add in 2 tbsp of onions, ginger, garlic, coconut, green chilies and cashews. Roast them on a medium flame for 5 min. Transfer to a plate and allow it to cool down.
3. Once it cools down grind everything to a nice smooth paste and set aside.
4. In a pan add in 1 tbsp of oil and allow it to heat up. Now add in bay leaf, fennel seeds, cloves and cinnamon stick and saute for 30 sec. Add in onions and cook till they are nice and translucent. Add in tomatoes and cook till they become soft. Add in turmeric powder, salt and mix.
5. Add in the chopped vegetables and mix. Add some water and cook till the vegetables are nice and tender. Add the ground paste and mix well. Add required water and allow it to boil well on a medium flame for 10 min. Add 1/2 tsp of garam masala powder and let it boil for 5 min. Adjust the salt and the consistency according to your taste.
6. Finally add the finely chopped coriander leaves and mix well.
