Tomato rice is the simplest rice preparation. The tomatoes are cooked until they are nice and soft along with other spices and it is mixed with the rice. It is spicy and tangy but tastes delicious. It goes well with plain curd or any kind of raita. It is great for lunches too.
Preparation time – 10 min
Cooking time – 20 min
Serves – 4
Ingredients:
Cooked basmati rice – 1 cup
Onion – 1 medium sized chopped finely
Tomatoes – 4 medium sized chopped
Curry leaves – few
Green chilies – 2 sliced
Ginger – 1 inch piece chopped finely
Mustard seeds – 1/4 tsp
Urad dal – 1/2 tsp
Chana dal – 1/2 tsp
Dry red chilies – 2
Cashews – 10 chopped into pieces
Turmeric powder – 1/2 tsp
Salt – as per your taste
Red chili powder – 1/2 tsp or as per your taste
Cilantro/coriander leaves – few finely chopped for garnish
Oil – 2 tbsp
Method:
1. Heat up oil in a pan. Add in mustard seeds and when it splutters add in urad dal, chana dal, cashews and saute for 30 sec. Now add in ginger, dry red chili, onions, curry leaves and green chilies and cook till the onions turn translucent.
2. Now add in the chopped tomatoes and mix well. Add in the turmeric powder, chili powder and salt and mix. Cook it covered till the tomatoes are nice and soft. Keep stirring frequently so that it doesn’t stick at the bottom.
3. Add in the cooked basmati rice and mix well. Add in finely chopped coriander leaves and mix.

Tips:
1. The tomato mixture should remain moist before mixing with the rice.
2. Soak the basmati rice before cooking it for 20 min. Once the rice is cooked transfer it to a broad vessel and let it cool down. Gently separate the grains before mixing the rice with the tomato mixture.
3. The tomato rice can be prepared with leftover rice too.
