Kaju katli is a delicious Indian sweet which is similar to Barfi. It is a quick and easy sweet preparation with less ingredients. It is prepared using cashew nuts and sugar syrup. It is normally cut into diamond shapes and decorated with edible silver foil. It is usually prepared during Diwali and other festivals.
Preparation time – 10 min
Cooking time – 20 min
Makes – 20 pieces (approx)
Ingredients:
Cashew nut powder – 2 cups
Sugar – 1 cup
Water – 1/2 cup required for making the sugar syrup
Ghee/clarified butter – 1 tsp
Method:
1. In a mixie powder the cashew nuts and keep it aside. In a pan add the sugar along with 1/2 cup of water and allow it to boil. Let it boil for 5 to 10 minutes on a medium heat. Keep stirring frequently.
The consistency of the sugar syrup should be like a single thread consistency. You can check the consistency by pouring few drops of sugar syrup into little bit of water. If it forms a single line without dissolving then it is the right consistency.




2. Once the sugar syrup reaches the right consistency switch off the stove and add in the cashew nut powder and mix. Add in a tsp of ghee/clarified butter and mix well. Keep mixing till the mixture turns like a dough.


3. Grease a plate with a little ghee/clarified butter. Now pour the cashew nut and sugar mixture on the plate and flatten it nicely. Let it rest for 2 to 3 minutes and cut into desired shapes.
