Vegetable Pulav

Vegetable Pulav is an easy one pot dish prepared using rice, vegetables and other spices. It is most commonly prepared during parties and other celebrations. It is great for lunches too.

Preparation time – 20 min
Cooking time – 25 min
Serves – 4 – 6

Ingredients :

Basmati rice – 1 cup
Water – 1 1/2 cups
Onion – 1 medium sized finely chopped
Ginger and garlic paste – 1 tsp
Green chilies – 4 sliced
Carrots – 1/4 cup chopped
Green beans – 1/4 cup chopped
Green peas – 1/4
Coriander leaves / cilantro – 1/4 cup finely chopped
Mint leaves – 1/4 cup finely chopped
yogurt – 3 tbsp
Bay leaf – 3
Cinnamon stick – 1/4 inch
Cloves – 3
Cardamom – 3
Garam masala powder – 1/4 tsp
Salt – as per your taste
Chili powder – 1/4 tsp or as per your taste
Oil – 3 tbsp

Method:

1. Wash the basmati rice couple of times and soak it for 30 minutes.

2. In a pressure pan, add 3 tbsp of oil and allow it to heat up. When the oil is hot add in the bay leaf, cinnamon, cloves and the cardamom and saute for a minute. Now add in the onions and the green chilies and cook till the onions are nice and tender.

3. Once the onions are nice and soft add the ginger and garlic paste and saute till the raw smell has gone. Add the vegetables and saute for 2 minutes. Add the finely chopped mint and coriander leaves and mix well.

 

4. Add salt, garam masala powder, chili powder and the yogurt and mix well. Now drain the water from the soaked rice and add the rice to the masala and mix well till it is well coated with all the masala.

5. Once the rice is well mixed with the masala add 1 1/2 cups of water. Cover the pressure pan and let it whistle for 2 times. Wait till the pressure goes down completely. Open the pressure pan and wait till the rice cools down a bit and mix well. The delicious and aromatic vegetable pulav is all ready to enjoy.
