Lemon Rice

Lemon Rice is a tasty meal that is quick and easy to prepare. Ideal for the busy professional.

 Preparation time – 10 min  

 Cooking time – 20 min

Serves – 3 to 4 people

Ingredients:

 Rice – 1 cup

Water – 2cups

Lemon – 2 medium sized

Ginger – 1/4 tsp

Green chilies – 2 

Curry leaves – 4 to 5 leaves (finely chopped)

Turmeric – 1/4 tsp

Salt – as per your taste

Coriander leaves / cilantro – few strings finely chopped for garnishing

Oil – 3 tblsp.

Tempering:

Mustard seeds – 1/4 tsp

Chana dal – 1/4 tsp

Urad dal – 1/4 tsp

Method:

  1. Wash and soak the rice for 15 min.Now drain the water and add 2 cups of water to the rice and cook till the rice is well done.
  2. Set the rice aside till it cools down

   3.Heat oil in a pan.Once the oil is hot add the mustard seeds and allow it to splutter.Once the mustard seeds                   splutters add the Chana dal and the Urad dal and saute it till it is golden in colour.

          

4. Now add the ginger,green chilies and the curry leaves and saute for a minute. Now add the turmeric and salt.

      

5.Now add the rice and the juice of two lemons and mix well.

          

6.   The lemon rice is all ready to enjoy.Garnish with few finely chopped coriander leaves.
