Aloo Mutter Paratha

Aloo/Potato Mutter Paratha is a Indian flat bread made with whole wheat flour and stuffed with potatoes and green peas. The combination of potatoes and green peas along with some spices makes this paratha very soft and tasty. Parathas are a very common food in North India. It is great for breakfast and lunches.

Ingredients required to make the dough:

Whole wheat flour – 1 cup
Water – 1/3 cup
Salt – 1/4 tsp or as per your taste
Oil – 1 tsp

Ingredients required for the stuffing:

Potatoes – 3 medium sized, boiled, peeled and mashed roughly
Green peas – 1/4 cup
Onion – 1 medium sized finely chopped
Jeera/cumin – 1/4 tsp
Garam masala – 1/4 tsp
Salt – as per your taste
Chili powder – 1/4 tsp or as per your taste
Oil – 1 tbsp
Cilantro – few strings finely chopped

Method:

1. Take 1 cup of flour, add salt and a tsp of oil. Mix well till the oil is well incorporated in the flour. Then add 1/3 cup of  water little by little and mix the flour. Knead the dough well until all the dry flour is absorbed and forms into a nice dough. Cover the dough and let it rest for at least 20 minutes.

Mixing the dough well in advance makes the parathas nice and soft.

2.Heat 1 tbsp of oil in a pan. Once the oil is hot add in the cumin seeds and saute for a minute. Now add the finely chopped onions and cook till the onions are nice and soft. Add some salt, chili powder and the turmeric powder and cook for a minute.

3. Add in the green peas and the potatoes. Roughly mash the potatoes and the green peas and add 1/4 tsp of garam masala powder and mix well. Cook on a medium flame for 5 minutes until the potatoes are well coated with the masala. Add the finely chopped cilantro, mix well and set aside.

4. Divide the dough into small equal balls. Take one ball and roll it into a small circle as shown in the picture. Place 1 tbsp of potato and the green peas mixture in the center of the circle and seal all the edges tightly.

5. Flatten the ball and dip it in the dry flour on both the sides. Now roll it using a rolling pin gently. The parathas should not be too thin.

Heat the tawa on a medium heat. Once it is hot place the rolled paratha on the tawa. Wait till the bubbles appear on one side. Now flip the paratha to the other side and apply little bit of oil. Cook it for 30 seconds and flip it over and cook it for another 30 seconds.
