Poha Upma

Poha upma is the most simple, quick and delicious breakfast recipe prepared using flattened rice. It is a great recipe for busy working people or bachelors.

Serves  – 4

Ingredients:

Poha – 1 cup
Onions  – 1 medium sized sliced lenghtwise
Green chilies – 4 sliced
Ginger – 1/4 inch chopped finely
Curry leaves – few
Mustard seeds – 1/2 tsp
Cumin seeds/Jeera – 1/2 tsp
Chana dal – 3/4 tsp
Urad dal  – 3/4 tsp
Peanuts – 2 tbsp
Asafoetida – pinch
Mixed vegetables (carrots,peas and potatoes) – 1 cup chopped into small pieces
Turmeric Powder – 1/4 tsp
Salt – as per your taste
Coriander leaves/cilantro – few finely chopped for garnish
Lime juice – juice of half a lime
Oil – 2 tbsp

Method:

1.Wash the Poha couple of times and soak it in the water for 10 minutes. Drain the poha and set aside.

 

2. In a pan add 2 tbsp of oil and allow it to heat up. When the oil is hot add in the mustard seeds and allow it to splutter. Add the cumin seeds/jeera, Urad dal, Chana dal, peanuts, asafoetida and saute it for a minute. Add the chopped onions, green chilies, ginger and the curry leaves and cook till the onions are nice and soft. Add in the turmeric powder and salt.

 

3. Add the chopped vegetables and cook for 5 minutes till the vegetables are nice and tender. Add the drained poha and mix well. Cook it on a medium flame for 5 minutes. Add in the juice of half a lime, coriander leaves and mix well.

The poha upma is all ready to be served.
