Chicken Biryani

Chicken biryani is prepared using basmathi rice, chicken and other spices.

It is generally cooked in dum style in hotels. But chicken briyani can be cooked in cooker too. Let’s learn how to make flavorful chicken briyani at home.

Preparation time – 15 minutes
Cooking time – 45 minutes
Serves – 4

Ingredients:

Basmati rice – 3  cups
Chicken – 750 g
yogurt/curd – 1/2 cup
Onion – 2 medium sized cut into lengthwise
Tomato – 1 medium size chopped into pieces
Green chilies – 3 cut into lengthwise
Mint leaves – 6 tbs of finely chopped
Coriander leaves – 3 tbs of finely chopped
Cinnamon – 1 1/2 inch
Cardamom – 4
Star anise- 1
Cloves – 4
Bay leaf – 4
Oil – 3 tbs
Butter or Ghee – 3 tbsp
Salt as per your taste

Ingredients for grinding:

Ginger – 1 1/2 inches
Garlic – 8
Dry red chilies – 8 or as per your taste
Cardamom – 2
Cinnamon – 1/2 inch
Cloves – 2

Grind all the ingredients in a mixture into a smooth paste using little water. Keep aside.

Method:

1. Wash and soak the rice in the water. Cut the chicken into big pieces (around 2 inches) and wash it.Keep aside. Heat oil and butter/ghee in a cooker or pan. Add cinnamon,cardamom,star anise,bay leaves & cloves, fry till roasted. Now add the chopped onions and chilies. Fry until the onions turn golden brown, then add chopped tomatoes into the onions. Fry until the tomatoes gets smashed well.

  

2. Add the chicken pieces into the cooker. Fry until the chicken color is slightly changed. Add turmeric powder, ground paste and salt. Stir for a minute till the paste is well mixed with the chicken.

  

3. Add yogurt and stir the mixture, cook until the chicken is well cooked and the mixture gets thicker as well. Drain off  the water from the rice and add it to the chicken. Add 6 cups of water into the cooker and add required salt. Then add the chopped mint and coriander leaves.

      

4.  Cover the pressure pan and let it whistle just for one time. Wait till the pressure goes down completely. Open the pressure pan and wait till the rice cools down a bit and mix well.

If you are cooking in a pan, keep cover and cook until the rice is done on medium heat.

  

 Serve Chicken Briyani with Onion raitha/pachadi with boiled eggs. Enjoy!!
